Protein Powder

Protein is a big topic right now and there are plenty of protein powders on the market for you to buy. Most come in plastic packaging. Some come with additional binders and less favourable ingredients. This is a whole foods take on protein powder - plastic free! A simple mix of seeds and nuts. A perfect topper for sweet or savoury dishes- think salads, porridge, pasta dishes or create a smoothie. A heaped tablespoon provides about 2.5g of protein. Recipe from The Happy Pear.

Makes around 20 servings, based on 2 tablespoons per serve.

You’ll need a good blender.

Ingredients (when in italics available from the van)

100g pumpkin seeds (approx £1.30)

100g hemp seeds (approx £1.50)

50g linseed (approx 40p)

50g chia seeds (approx 50p)

100g almonds (approx £2)

Method

Depending on how good your blender is you can either pop all ingredients in blender and blend into a powder or we like to first blend the chia and linseed and then add remaining ingredients and blend again.

Store in airtight jar, best to use within 1-2 weeks.

Serve - use 2 tablespoons per person for a 5g protein boost. Great as a topper for sweet and savoury dishes. To make a simple smoothie add your chosen milk to blender, 2 tablespoons of protein powder, 1 tablespoon of cacao powder, 1 teaspoon cinnamon and 2 dates - blend and enjoy!
