This is a great diy mustard, recipe found in the great Simplicious cookbook from Sarah Wilson.

You’ll need a stick blender

Ingredients (when in italics available from the van)

100g whole mustard seeds - brown or yellow, or a mix - yellow have a milder, dijon flavour, brown are hotter and more potent in flavour.

Plain kombucha

option to make it garlicy - add a clove or two

Method:

Place your mustard seeds (and garlic if using) in a jar or directly into your stick blender cup and add enough kombucha to cover the seeds.

Place the lid on loosely or cover with fabric cloth and leave on shelf for 5-10 days. Check the seeds each day and add extra kombucha to ensure seeds stay covered. The seeds will swell. Once they stop absorbing the liquid and you see bubbles forming blend into a paste using a stick blender.

Scoop into airtight jar and keep in fridge - keeps for ages!
